This can only be done, without any much trouble by a druid.
Since you are not in combat while destroying / walking in the mines, you can shift back in flight form.
The achivement says: Get 10 mines, without touching the ground.
What you do is:
1 Shift flight form.
2 Go for a good group of mines, around 3/4
3 Fly in, you will get blown in the air, instant shift in flight form
4 Instantly, go back to the ground for a new pair of 3/4 mines.
5 Do this untill you get the achievement.
6 ...
So, if this isn't enough for you, here is the screenie it worked ^^
